2009 Voyager XT

I just bought a 2009 Voyager XT. I put a 5" offset Hydraulic Jack Plate and 2011 Mercury 300 Pro XS. I will mainly be using it at 4,300 elevation. What type of prop and pitch of prop should I be running for top speed.

What about at 900 elevation in the Phoenix area?

Lake Powell can get rough with big chop. Will this boat be able to handle some occasional beatings or should I avoid those days?
